    CRUSTED CHICKEN, the ingredients : 4 red peppers roasted peeled seeded 1 small red onion rough diced 2 tbs minced garlic 1 tbs dijon mustard 1 tbs honey 3 or 4 chippotle peppers 1/2 cup of red wine vinegar 1/2 cup of olive oil kosher salt and cracked pepper to taste CRUSTED CHICKEN, execution: Toss peppers with oil, salt and pepper and bake at 400 C for 2.5 hrs remove from the oven then place into bowl, wrap with cling film, to sweat the skin from the fresh of the peppers. wash and peel them. Puree all the ingredients and emulsify with olive oil. To combine fats with vinegar or citric juice into a smooth stable mixture.Pour mixture into sieve press out and keep liquid.Pour into squeeze bottle and set aside. 5 spice coating : 2 cups rice flour 2 tbs raw sugar 3 tbs chinese 5 spice coat chicken with flour, then place into heated pan with oil. Sear on each side and finish in oven until internal temperature is at 70C
